Today I’m celebrating my 1 year vegan anniversary. I have to say, that I’m really proud of myself. There are so many things I’ve learnt during this year and it’s hard to believe that going vegan was actually an overnight decision. It was supposed to be just an experiment, which became my new lifestyle.
Although I was a ‘dietary vegan’ at first, right now I’m in transition phase and I’m successively replacing some non-vegan cosmetics and pieces of clothing with new once. I don’t, however, see the point in throwing away things, which are completely fine, so I’m just going to use them up and then switch them for some vegan options.
Although I don’t consider going vegan as any kind of sacrifice, I’m not gonna lie - I’ve had some tough moments. What’s interesting, in my case the problem are not craving for meat or dairy. I’ve never been a fan of animal products, I ate them rather out of convenience or laziness. Problematic are usually family meetings, weddings, conferences and travels. A few times, during this kind of events, I had to bring myself to eat vegetarian food or dishes, I wasn’t completely sure were vegan.
It might sound pathetic, but I wouldn’t been able to do that without the support of my family and friends. They were really supportive, although sometimes it’s hard to explain to other what beeing vegan actually means.
In conclusion, it was a wonderful adventure for me and I highly recommend everyone to give it a try. In the end I wanted to share two more thing. Firstly, I wanted to emphasize the importance of living by example. You would be surprised how your everyday choices influence people around you. Secondly, find your own way and stick to your rules. It really pays off.
Getting back to the topic - to celebrate my 1 year vegan anniversary, I prepared my favorite coconut milk chia pudding with mango and passion fruit purée. Usually I choose local and seasonal produce, but on high days I like to eat something exotic. I know, that nowadays chia seed pudding is nothing special, but in combination with this tropical fruit mousse, it makes a perfect extraordinary breakfast or dessert. Interested? Coconut Chia Seed Pudding with Mango & Passion Fruit Purée
makes two (big) portions
- 1 can (400 ml) of coconut milk
- 5 tbsp of chia seeds (I used white chia seeds)
- 1 tbsp of the liquid sweetener of your choice (maple syrup, agave syrup, honey)
- Juice of half a lemon
- 1 ripe mango
- 1 passion fruit
- Juice of half an orange
- Coconut chips for topping
In a bowl mix the coconut milk, the sweetener, the lemon juice and the chia seeds. Divide the mixture into two parts and place it in two jars or glasses. Let it set in refrigerator overnight.
Prepare the fruit purée: peel the mango, squeeze out the seeds from half of the passion fruit(save the other half for topping), add the orange juice and blend well together.
Remove the chia pudding from the fridge and top it with fruit purée, coconut chips and remaining passion fruit seeds.
