Spicy Mexican soup with baked tortilla chips and mashed avocado

I've never been much of a soup eater. I make them rather rarely and when I do decide on that, I have to be sure that they will be filling enough to be served as main (and only) dish. I just can’t eat a three-course meal - it's way too much,  but just a soup is, on the other hand, usually not satisfying enough for me. That’s why I prefer cream soups with different kinds of toppings or simply with a piece of fresh bread. 

My favorite main dish soup is the spicy Mexican soup with baked tortilla chips and mashed avocado.  It’s not only aromatic and comforting, but also really  quick, easy and cheap to make. All you need is your favorite veggies, some canned tomatoes, an avocado and a few good-quality tortillas.  I had been experimenting a lot with different combinations of ingredients before I found the perfect one. You can just use the idea below to create your own Mexico-inspired dish. The Mexican spice blend recipe will be definitely helpful. 

 Mexican soup

  • 1 large onion
  • 1 clove of garlic
  • 1 cup of cooked red beans
  • 1 cup of corn
  • 1 large red pepper
  • ½ cup of water
  • 2 cans of chopped tomatoes
  • 1 tablespoon of rapeseed oil
  • 1 tablespoon of the Mexican spice blend
  • Salt & pepper to taste 

Finely chop onion, garlic and pepper. Heat oil in a pot on medium heat, add onion and garlic, stirring occasionally fry until golden. Add pepper and Mexican spice blend, cook for a few minutes and add corn and beans. Pour in the canned tomatoes and water. Mix well together and season with salt and pepper to taste. Cook for about 20 minutes. Serve with mashed avocado and baked tortilla chips (see directions below).



Baked tortilla chips

  • 2 plain wheat tortillas
  • 1 tablespoon of rapeseed oil
  • Salt

Preheat oven to 200°C. Place the tortillas on the cutting board and cut into wedges. Arrange them on baking tray lined with wax paper, drizzle with oil and sprinkle with salt. Bake for 5-7 minutes.


Mashed avocado

  • 1 avocado
  • 1 teaspoon of lemon juice
  • Salt

Scoop out all of the avocado meat with a spoon and drop it into a mixing bowl. Squeeze a little fresh lemon juice on it and add a pinch of salt. Mash the avocado using a fork and mix well together.
